The White Restaurant, however, is unlike any restaurant ever built. It’s not merely a restaurant but a museum of flavor.
The story is set in the early 24th century when ice covers planet Earth from pole to pole. The Anthropocene extinction destroyed nearly 90% of all species. The climate crisis of the late 21st century and the ensuing climate squabbles eventually led to World War III, also known as the Great Polar War of the XXII century. The death and carnage of mankind’s most brutal conflict came to an abrupt halt when a Brazilian scientist decided to single-handedly save the world by genetically modifying phytoplankton (commonly known as guppy) and releasing it into the ocean.
In the years that followed, the oceans turned entirely green, and despite the collaborative efforts of every nation on Earth, guppy’s sheer resilience thwarted all attempts to stop it.
Absorbed by guppy, the atmosphere’s carbon dioxide got trapped at the bottom of the ocean as the phytoplankton lived out its life, died, and sank. The resulting over-oxygenated atmosphere caused the temperatures to plummet, leading to the greatest ice age in the planet’s history.
With time, societies adapted and even flourished in this new world. Yet, if you want to taste the past, if you wish to savor humankind’s vast gastronomical heritage, there’s only one place you can go.
Of course, to eat there, you must be either extremely wealthy and powerful or, alternatively and far more challenging to accomplish, you can get a job there.

WHO?
John Ilho was born in Portugal in 1986. After a successful career as a chef, he put his knives away to pursue his lifelong passion for creative writing.
